My idea is that because Tom wasn't involved in the memory is that the Stone erased a memory that wasn't really accurate. They may have forgotten the dance (which is honestly a bummer because I really thought it was adorable when they danced in the memory) but the feelings may definetely still be there, especially if Star was right when she questions whether their feelings were really because of the Blood Moon. Maybe they are hiding it from Tom? After all, Tom kinda guilt tripped Star in "Lake House Fever" when he talked about how he was hurt when Star and Tom broke up. I feel like Nefcy is making this very vague for suspense and so far it is really working for me.
I would guess that if they were lying to anybody, it's to themselves. At the moment they're telling themselves those feelings are gone because at least in the short term it'd be easier and less painful if that's true. But they've both tried to deny that their feelings for each other existed before, and it didn't work. At some point they'll have to stop running away and face it.
Well either that or it really was all just because of the curse and their feelings are now just platonic, but I really hope that's not the case. It would make the raw emotional impact of episodes like Bon Bon and Starcrushed seem wasted if it was ll just fake feelings from a curse.
