Marco's Super Awesome Nachos are nachos that Marco Diaz first makes in the episode "Party With a Pony". Marco makes a plate of them and presents them to Star Butterfly. Star is in awe of the food because of its triangle shape. Unfortunately, Marco ends up dropping the plate in shock at the arrival of Pony Head.

They later appear at the end of the episode; Marco and Star share a plate of them while relaxing on the couch and watching TV.

They are briefly seen in "Fortune Cookies", being taken out of the oven by Marco.

The nachos are usually covered in a pile of cheese sauce and sliced red peppers.

Ingredients[]

  • Chips
    • Bag of corn tortilla chips
    • Juice of 1 lime
    • 1 1/4 teaspoon (6.2 mL) cumin
    • 1 teaspoon (5 mL) paprika
    • 1 pinch cinnamon
    • 1 pinch chili powder
  • Pico de gallo
  • Frijoles de la olla
    • 1 can of pinto beans
    • 1 tablespoon (14.8 mL) olive oil
    • Salt, pepper to taste
  • Guacamole
    • 2 avocados cut into small cubes
    • Juice of 1 lime
    • 1 tomato, chopped
    • 1 jalapeño, seeded, diced
    • Salt, pepper to taste
  • Cheese sauce
    • 4 tablespoons (59.1 mL) butter
    • 6 tablespoons (88.7 mL) flour or cornstarch
    • 1/4 cup (59.1 mL) milk
    • 1 block soft cheese, shredded
    • 1 pinch chili powder

Instructions[]

  1. Frijoles de la olla: Put a can of pinto beans in a pot with a tablespoon of olive oil. Bring them to a boil, then reduce to a simmer for about 10 minutes, adding salt and pepper to taste.
  2. Guacamole: Mix ingredients together in a bowl about 20 minutes before serving, then cover and refrigerate.
  3. Cheese sauce: Melt the butter and whisk in the flour. Cook until it starts to bubble, then lower the heat. Whisk in the milk and allow mixture to return to bubbling before adding in the shredded cheese slowly, bit by bit, as it melts.
  4. Chips: Place chips in a paper bag, and squeeze lime juice into the bag. Sprinkle spices onto the chips, then close the bag and shake to coat.
  5. Combine: Pour chips onto an oven-safe platter in a couple of layers. Then ladle the beans and some bean broth onto the chips. Place the platter in a preheated oven at 375 degrees (190 Celsius) for about 10 minutes to warm the chips and bind them with the bean juices. Remove the platter from the oven and generously ladle the cheese sauce over them. Cover with the cold guacamole, pico de gallo, and chopped jalapenos. It's important the fresh ingredients are cold to add contrast between the hot chips/beans/cheese layers below. Serve immediately.
